#23 Pan Fried Salmon with Garlic Cream Sauce
Well, it's not something that I eat, but something that the man I love eats. It's salmon. I really don't like salmon to be honest. I only eat salmon in raw fresh state, as sashimi, that's all. Alright, let's cut to the chase now.
Ingredients:
Pan Fried Salmon
Salmon (up to your preference the size of it)
Half a lemon
Salt
Pepper
Egg White
Mixed Herbs
Olive oil
Garlic Cream Sauce
Cooking cream, one small box, like about 300 ml
4 Cloves of Garlic (chopped finely)
Mixed herbs
Corn flour
A pinch of salt
A pinch of pepper
Butter
Instructions:
Okay the recipe is a little vague as it really depends on the size of your salmon so if I were to say a tablespoon of salt, and you use a big slice of fish, then the thing would be tasteless right? Okay you get my point.
So anyway, firstly, wash your fish then drain the water off. And then wash it with lemon, so that it won't have a fishy taste/smell. After which i dipped in egg white, this is to make sure that the flesh remain intact when cooked. Then I seasoned with a pinch of salt, some pepper (if you want it to be more hot, put more pepper in then), and a teaspoon of mixed herbs. You can add more herbs if you want it to be more fragrant. I then poured some olive oil on it. Heat up a pan with a little olive oil, on low to medium heat, pan fry the salmon. Until you see the the bright orange flesh turning to peachy light orange. Don't overcook it though. So why it was sizzling on the pan, i put some more mixed herbs on both sides of the fish. It took me about 8 minutes or so to fully cook the fish.
Yeah it was that easy.
So next, the sauce. Take like a tablespoon of butter, heat in a small saucepan. Put in the garlic, and saute for a while, this is a very quick process because garlic gets burnt very quickly. Then you add in your cream. Best to use a whisk. Add in the corn flour a bit by bit to thicken the sauce. I added the same mixed herbs, a pinch of salt n pepper for taste and kept putting in the corn flour until it thickens. Keep whisking and make sure there are no clumps. And all these should be done as low heat. And viola! Once the sauce thickens, you are done.
Just pour it over the fish. That's all! Happy trying! :)

#21 Terriyaki Chicken Wings
Ingredients:
Woh Hup Terriyaki Chicken Marinade
Chicken wings
Mixed Herbs in a bottle (optional)
White pepper
Oil
1 garlic (chopped finely)
Instructions:
Yes, the ingredients are as little as that. Wash your chicken first okay! Then you put the chicken in a bowl , be generous with the terriyaki sauce, but not so much, as long as it covers the chicken and have enough to act as gravy for your dish. I used about half a bottle of the marinade. Lather your chicken in the marinade, and add in a little mixed herbs, but this is optional, but I'm telling you, you won't regret it as it gives an aroma to your dish that makes you drool. Oh yums. Just a dash of it will do, don't need so much, like about a teaspoon. I also added in a dash of white pepper for taste as well. But again, it's optional. I just like unique flavours in my cooking.
Leave the chicken marinade to set for at least 30 minutes. The longer the better, so that the taste would be stronger. Heat up your pan. Don't use so much oil, just about 1 tablespoon. Then you add in your garlic. After which, you just pour the whole marinated chicken in a pan. Slow cook the chicken on low heat. Occasionally turn flip the chicken, and then cover the pan with a lid. So that the chicken would be throughly cooked. Repeat this flipping process like twice for each side of the chicken. Afterwhich, your dish is ready to be served! So easy right? You're welcome. Haha.

#20 Kerepek Bayam
I made some improvisation to the recipe as all he put in was salt and sugar, so I think there's a lack of flavour.
Ingredients:
Round Spinach (any amount you want)
Rice Flour
Water
Salt to taste
1 teaspoon Sugar
1 teaspoon Pepper
1 teaspoon Chicken Stock
Instructions:
Pluck the leaves of the spinach as we won't be using the stems. You can use that for other dish. Or just eat it like that like Popeye. No lah just kidding. Haha.
Then You add the flour in a mixing bowl (just use spoon will do), and add water bit by bit, until you get a thick watery mixture, some sort like a milkshake texture. Then you add in a pinch of salt, sugar, pepper and the chicken stock. Well this amount varies with the amount of flour you are using. I didn't make much thus I didn't need so much salt etc.
Then you heat up some oil in a flat frying pan (not a wok), dip your spinach leaves in the batter, and fry it in the hot oil until crispy. Yes! It's as simple as that! Repeat the step over and over again! All the best!

1 onion (blended)
About 10 dried chillies (boiled and blended)
Some anchovies (up to you how much you want)
Grab a handful of tamarind
Batang keladi (gasak lah aku tak tau English cakap ape. Haha!)

8 tablespoons of blended chilli
1 teaspoon chicken stock

2 tablespoons sesame oil

#17 Oreo Cake
Hello hello!
I know, it has been forever since I updated my blog. My bad. I have been cooking, but I haven't been updating, due to laziness and also I thought nobody even read this blog so why bother. Haha. So anyway, this isn't really MY recipe, but it's a simply recipe, for an extremely delicious cake. Strictly for OREO LOVERS! Well I am not a good baker, but when I bake this, it can be gone in a day.
You can find this at certain Value Shop, NTUC Xtra or NTUC finest. I bought mine at NTUC Xtra. It costs about $6.20. Apart from that you would need one small carton of milk (the small HL carton), use the whole thing, and also 4 tablespoons of butter. These steps are stated at the side of the box.
So the thing is, it's better if you use a smaller tray, so your cake would be thicker. But if you don't have, you can use paper cups (for cupcakes). It would be more tedious but easier to eat.
Instructions:
Melt your butter, mix thoroughly with the oreo crush, which is in packet number 1. Make sure it is evenly distributed or your base would just crumble. Nope, not a good sight. And the ones with more butter, will clump. Spread this evenly at the base of your baking tray or cupcake holders. Just a thin layer would do it.
Step 2, mix the packet number 2, with the milk using a mixer. Do not under beat. Beat the thing until it becomes a thick cream. Once you get that texture, open the last bag in the box, which is the broken oreo pieces, take out half of it, and fold it in the mixture. Don't use the mixer. Just use a spatula.
Here comes the tideous part. Spreading the batter on top of the crust. As it is rather thick, while spreading, your crust might just "dislodge" from the base of your tray. This sucks and make sure you fix this problem. Just do it slowly. Doesn't matter if it looks messy, it's nicer that way actually. After the whole crust is covered up, this is when you utilise the remaining oreo pieces in the 3rd packet, just place it anywhere you like it on the cake, and however you want it. Freeze it in the freezer for about 2 hours or so, and you are done. As for mine, I used some heart sprinkles and chocolate rice. To make it more pretty and yummy!

1/2 a packet of rice vermicelli (this is up to you based on the number of people eating)
2 squids (washed & sliced into rings)
6 prawns (washed)
2 fish cakes (thinly sliced)
3 tbsp chilli sauce
1 small onion (peeled)
2 cloves of garlic (peeled)
10 dried chillies (cut and boiled)
5 limes (for the juice)

1 yellow bell pepper (cubed into small pieces)
2 tbsp oyster sauce
4 tbsp sweet soya sauce
2 tbsp fish sauce
About 5 pieces of kai lan *optional*
Knorr Hao Chi to taste

Water (just nice to make the batter thick but not so thick; should be thick liquid form)

*this ingredient is optional but it's reallly nice to eat so you should put it in!*

Bangkok!!
So I am here to share about my foodie experience there! Obviously I went there for the food! It was just a short 3 days trip. The 1st day I went to Purr Cat Cafe. I did not buy any food, afraid that it might contain lard or anything. I bought caramel machiato and shared with my boyfriend. It was definitely worth the buy coz it was quite delicious actually. Wasn't so costly as well. Apart from that, accompanied by the soft kittes just completed my life even! I was just so happy I could cry tears of joy. Yeah, trust me, I am THAT emotional when it comes to cats.
After that, we went to Terminal 21. We had our dinner here. There is a food court where you have to buy a pre-paid card which is refundable. Every stall sells pork expect the stall named Bismillah. (like duh) We had a hard time finding it though it was just the first stall haha. The food was not bad actually. It costs like 40 baht, which is barely $2. Don't unse the cutleries by any means. Seems like it is shared for all the stores. Which doesn't make any sense actually. Oh don't forget to eat the Mango Sticky Rice! It was sooooo nice! TO DIE FOR!
At night, we returned to pratunam market, where our hotel is, and I bought Banana prata, which has milo powder all over it plus sweetener milk and sugar. It was sooo awesome! And so cheap too! 30 baht or so. So that was my dinner.
As for the second day, we went to Chatuchak, AKA Jatujak Market/ JJ Market as what the Thai say. We ate mangoes there. It was just a mango heaven, with aunties wearing a hat with a big mango on their heads, HAHA! Okay anyway we went to have our lunch at Saman Islam. The name is rather funny coz direct translation woukd be like "Fine Muslim". Okay forget it. This stall is beside the clock tower. There is only 1 clock tower there. If I am not wrong it's located at section 16. There is only 1 food stall directly beside the food tower. I ate the tom yam noodle which was so delicious. My firned ate mixed rice, and the rendang was very nice coming from a Thai. As for my boyfriend he ate Chicken briyani, which apparently not to my liking as the spices were abit too strong and not nice to eat. The milk tea was very delicious there, and I also bought mango salad as well as a side dish. Apart from that I bought Thaksin Beef Noodles take away, only to eat it in Singapore. It was almost the same as the one in Singapore so nothing unique about it.
After a heavy lunch, we went to eat coconut ice cream by the stalls at JJ market. It was so delicious I had 5 scoops HAHAHA! Okay then after walking endlessly at JJ Market until our legs almost broke, we went off to MBK. Where we had ice cream AGAIN but this time at Swensen's. The Ice Milk Tea was so nice I jsut could not stop myself from drinking no matter how full I was. Haha! The ice creamw as also very nice... It has koko crunch at the bottom. Hehe. As for dinner, we ate at Yani Restaurant at level 5. It has since been renovated since the last time I visited BKK last year. It is much spacious now. The food is still yummy. We ate chicken green curry, rice, black peper stiry fry beef. It was sooo yummilicious! Hehehe! Everything also yummy eh?
As for the last day, nothing special, just ate Cold Stone at the airport. It was so cheap! Haha. I bought cake batter plus caramel cuppucino with resse chocolate. It was super yummy in the tummy! Hehehe! Wasted sia someone never buy or tasted mine. :P
Okay so that's all for my BKK trip! You guys should really visit BKK one day! And I am planning to visit this place once a year. Crazy right? I know. Haha! K bye.

#12 Chicken Thai Green Curry
1 clove of garlic (chopped finely )
1 small box of coconut milk
1 packet of thai green curry
4 small eggplants
1/2 a chicken cut to desired sizes
3 tablespoon Tumeric powder
1 teaspoon salt
3 green chilli padi
4 potatoes (peeled and cut into quarters *optional ingredient*)
3 kaffir lime leaves
Water
These are the main ingredients used. Not in picture would be the eggplant, potatoes, lime leaf and chillies. As these are optional items. |
Idea and travel
I shall blog again tonight or tomorrow on my Thai Green Curry Chicken recipe. However, once again, it is an instant paste, and I bought the paste in Thailand last year. Haha! So in other words, you need to source for your own thai green curry paste in Singapore. There is la, brand name, Roi Thai, tried that one before and it was simply delicious, and all you needed to do was to put in whatever you want in your curry (chicken, veggies, beef? Anything!). The one I bought in thailand requires manual input of coconut milk etc. So let's try tonight! If it's nice, then I shall buy more in Bangkok! Muahaha! :)
#11 Black Pepper Stir Fry Beef
Ingredients
1 medium sized onions (half sliced thinly, half finely chopped)
2 cloves of garlic (finely chopped)
1 packet of Adabi Black Pepper mixture (About $1+ can find at NTUC)
400g of sliced beef
Corn flour
Corriander leaves
Oil
(So little ingredients but so delicious?!)
Instructions
Firstly, this is a very important tip. Wash your beef. Lather your sliced beef with corn flour. Afterwhich, heat up some oil, and deep fry your beef. Don't over fry it, as it would end up being hard. Why do this extra step? Coz this step will tenderize your beef. It will be easy for you to chew then. Once done, you set the beef aside.
Next, heat up another pan, with about 3 tablespoon of oil. Saute the finely chopped onions and garlic, until you you can see it caramelized, and then add in your beef. Stir fry the beef. Meanwhile, add some water to the black pepper mixture. It will look quite watery, but don't worry, that will dry up pretty quick in the pan. After that you add it in. Stir the beef, so that every beef is covered in this delicious sauce.
To make the dish more appealing, I put some corn flour like 1 tablespoon, mix with some water, to thicken the paste, and will make your beef glisten. Once you see the sauce has already thicken up, just snip the corriander leaves into small pieces using a pair of scissors, and then add in the sliced onions. Let is cook for about a minute, turn off the heat, so the corriander and onion would still be crunchy. I added in 1 chilli, cut thinly, as a decoration, to add colours to my dish. And there you go! Your Black Pepper Stir Fry Beef!

#10 Roti Kirai (or Roti Jala)
Ingredients
1 packet of plain flour
1 egg
a pinch of salt to taste
water
1 tablespoon of tumeric
Instrcutions
Beat all these ingredients up. As for the water, put in slowly until you get a semi thick mixture, but not so thick. Liquid form but can be considered thick. Looks like a pancake batter.
It's recommended you buy this squeeze bottle, to easily make roti kirai coz if you use the old school method, it would be very messy. Heat up just a little bit of oil in the pan and do your magic with the bottle. Just "scribble" the pan with the mixture! Let the thing cook for about 30 minutes, dab some oil on it (for fragrance I suggest use a pandan leaf *tips from dad*) and then flip it over. Cook for another 30 seconds or so, and you are done! :)

#9 Chicken Curry
Ingredients
2 Onions
2 cloves of garlic
4 cm of ginger
half a packet of curry powder (in this case, I used chicken curry powder)
Water
salt
chicken stock
4 potatoes (Peeled and cut into 4 parts)
Chicken (cut into small pieces)
The 4 spices (1 cinnamon stick, 2 cardamom, 4 cloves and 2 star anise)
1 box of coconut milk
Tumeric powder
Instructions
After cutting your chicken to your desired size, you lather the chicken with tumeric powder, but not too much, just a thin layer. After that, fry the chicken until it is half cooked, so that the chicken will cook easily if you were to cook it later. Set aside to cool afterwards.
Upon peeling the onion, garlic and ginger, toss them in the blender. Put in water about half of these ingredients height in the blender. Blend until smooth. Once done, take the mixture out, and then stir in with the curry powder until you get a thick paste.
Next, heat up the pan with oil, and put in the 4 spices. Once you can smell the aromatic aroma from the spices, you put in your curry paste. If it seems too dry, add in more oil. Stir the mixture and then let it cook under medium heat. Once you see the oil separating from the mixture, add in the coconut milk. Upon adding, fill the empty coconut milk box twice with water and add into the dish. Stir the mixture slowly until everything is uniform. Add salt taste. After that you add in your chicken and potato. I also added in 2 chilli, cut into halves, just to add colour to my dish.
Now all you have to do is put it on medium heat all the way and wait for your curry to cook. Yum2! Hehe! It's a surprisingly simple dish to make and you should really try it! You can buy instant prata to go along with that and also roti kirai (next recipe). Happy trying!

#8 Sheperd's Pie
Ingredients:
1 Onion (finely shopped)
2 cloved of Garlic (finely chopped as well)
300g of minced beef
salt
pepper
6 big potatoes (peeled)
About 50g of butter
Half a packet of beef curry powder
6 small aluminium trays (like the cupcakes one)
3 slices of cheddar cheese
Instructions:
First step would be to cut the peeled into quarters. Don't need to be perfect coz you are going to mash these babies up soon. Boil the potatoes in salt water for about 20 minutes. To check, poke a fork into the potatoes. If it easily goes through then you are good to go.
While waiting for the potatoes to cook, you prepare the meat. I wanted to use some carrots but my boyfriend's family does not eat vegetables. Saute the onion and garlic with some oil. Mix the curry powder with a little water like 3 spoonsful, just to make the curry powder like a very thick paste. Then add into the wok. Just keep stirring that, make sure that every bit of the curry is cooked, or else your dish would be spicy. Then, add in the beef. If you have diced carrots, you can include that in as well at this point. Stir the beef, make sure it mixes well with the curry paste, so that every bit of the beef has flavour. Add in a pinch of salt and pepper to taste. Let the beef cook, and dry up a little. Make sure it isn't too dry coz it would suck.
By then your potatoes should be done. Mash the potatoes up with like 2 tablespoon of butter. Taste it. If it's bland, put in some salt and pepper to taste.
This part now is very easy. Add the beef as the first layer in the aluminium tray, take half of the cheese slice, and you tear it into small pieces to cover the beef. And then cover with a layer of the mashes potatoes. Do this for the rest of the trays. Place these in a pre-heated over at 180 degrees celcius and bake for about 30 to 40 minutes. For the last 10 minutes baking, change the heat to just the top oven to cook the potato until it becomes light brown. Once you hear the oven *ting*, you're good to go! You can eat with chilli sauce if you want. Bon Apetite!

#7 Hot Hot Chix
Chicken (I used 4 wings, and 3 drumsticks for this recipe)
Fried chicken seasoning flour
Corn flour
2 eggs
5 chilli padi (finely chopped)
2 cloves of garlic ( finely chopped )
About 1 cup of chilli sauce
About half a cup of tomato sauce
3 spoonful of honey
1 spoonful of apple cider
1 spoonful of oil
A dash of pepper

2 cups of milk
3 spoonful flour

Ideaaa
Don't know if I should call it idea or simply another craving of mine. So today I intend to make creamy potato au gratin. It's potato in cheesy cream sauce. It would be my second time making it but it has been a while since I last did.
Anyway, there are various recipes online on this, but me being me, I would add a personal touch to it. Typical Rin. Hehe. It's a simple version. No thyme, nutmeg and such. Just a simple and yummy potato gratin. I shall post about it later on as I have yet to buy the ingredients for now... stay tuned!

#5 Spicy Fried Rice
2 spoons of sambal belacan
1 small onion thinly sliced
1 clove of garlic chopped finely
About a handful of dried anchovies
Rice (up to you how much. I used about 2 plates)
Salt
Sweet soya sauce
2 eggs
2 cili padi
Saute the onion, garlic and anchovies together until you see the anchovies is cooked. Put in the 2 spoons of sambal belacan and then add in the rice. Mix these ingredients until the sambal covers up the rice evenly. Add like 2 spoons of sweet soya sauce, mix the fried rice again, and then add in some salt to taste. I added in some water (about 4 spoons) as it was a little difficult to get the rice to be evenly distributed with the sambal. When the water is almost dried up, add in 2 eggs, scramble it up and mix with the rice. Cut the 2 cili padi into tiny pieces for the spiciness! And then you're done!

Next recipe
Hi everyone. I tasted something new at work today. One of my colleague brought along this bread beef pie she said... it was like a bread and butter pudding.. but in this case, it is not a dessert.
It was so delicious.. the texture was there... the taste was there... so I asked for the recipe and ahe gave me a brief recipe of it. So this shall be my next dish! Look forward guys coz it really tastes awesome!
