#13 Cheesy Meatballs with cheese sauce

Hey hey! So another recipe is here already since it is the weekendsss. (But I am working anyway tomorrow so who cares?) I made a simple dish today.. it's a repetiton of the potato au gratin recipe for the cream cheese... if you haven't seen the recipe, it's okay.

Ingredients:

1 packet of cheese chicken meatballs (there are 2 brands, anyone will do)
1 block of cheddar cheese (shredded)
2 cups of full cream milk
A little pepper
Some mixed herbs (this is optional and you can buy this in a bottle from any supermarket)
3 tablespoon plain flour
4 tablespoon butter
1 clove of garlicb(finely chopped )

Instructions:

First you pan fry the meatballs until it is cooked. This is the simpler step. Once it is kinda brown on the outside and looks crispy, you are good to go. It is good enough to be eaten as it is. Haha

Moving on... I first heat a small pot, put in the butter. Then I put in the garlic. The garlic gives this cream sauce a nice flavour when eaten. Use a whisk for this step as you want the ingredients to mix well. Then you add in the flour bit by bit to avoid clumps, while whisking in between each time you put in the flpur. You will see the butter thicken with the flour.

Next, add in the milk and continue to whisk. Afterwhich, add in your mixed herbs and pepper. Mix it well. Just a dash of pepper and herbs shall do it. Then you add in your cheese. You can at it all in at one go, no problem.  Keep stirring so that the cheese would be evenly melted. You will see the mixture thickens. If it is too thick? Add in more milk then. Then off the fire once done.

So the thing is, it hardens rather quick. Or thickens if you wanna put it that way coz it is still soft just that not totally liquid anymore. Pour some sauce on a serving dish, put the meatballs, and pour more sauce on top of it to cover the meatballs. Anddd you are doneee! No kidding! It is THAT easy. You can also choose to make this cream sauce as a dipping sauce to eat with the meatballs. Up to individuals.

Bangkok!!

Hiii! I am back from Bangkok my loyal readers! Hehehe!

So I am here to share about my foodie experience there! Obviously I went there for the food! It was just a short 3 days trip. The 1st day I went to Purr Cat Cafe. I did not buy any food, afraid that it might contain lard or anything. I bought caramel machiato and shared with my boyfriend. It was definitely worth the buy coz it was quite delicious actually. Wasn't so costly as well. Apart from that, accompanied by the soft kittes just completed my life even! I was just so happy I could cry tears of joy. Yeah, trust me, I am THAT emotional when it comes to cats.

After that, we went to Terminal 21. We had our dinner here. There is a food court where you have to buy a pre-paid card which is refundable. Every stall sells pork expect the stall named Bismillah. (like duh) We had a hard time finding it though it was just the first stall haha. The food was not bad actually. It costs like 40 baht, which is barely $2. Don't unse the cutleries by any means. Seems like it is shared for all the stores. Which doesn't make any sense actually. Oh don't forget to eat the Mango Sticky Rice! It was sooooo nice! TO DIE FOR!

At night, we returned to pratunam market, where our hotel is, and I bought Banana prata, which has milo powder all over it plus sweetener milk and sugar. It was sooo awesome! And so cheap too! 30 baht or so. So that was my dinner.

As for the second day, we went to Chatuchak, AKA Jatujak Market/ JJ Market as what the Thai say. We ate mangoes there. It was just a mango heaven, with aunties wearing a hat with a big mango on their heads, HAHA! Okay anyway we went to have our lunch at Saman Islam. The name is rather funny coz direct translation woukd be like "Fine Muslim". Okay forget it. This stall is beside the clock tower. There is only 1 clock tower there. If I am not wrong it's located at section 16. There is only 1 food stall directly beside the food tower. I ate the tom yam noodle which was so delicious. My firned ate mixed rice, and the rendang was very nice coming from a Thai. As for my boyfriend he ate Chicken briyani, which apparently not to my liking as the spices were abit too strong and not nice to eat. The milk tea was very delicious there, and I also bought mango salad as well as a side dish. Apart from that I bought Thaksin Beef Noodles take away, only to eat it in Singapore. It was almost the same as the one in Singapore so nothing unique about it.

After a heavy lunch, we went to eat coconut ice cream by the stalls at JJ market. It was so delicious I had 5 scoops HAHAHA! Okay then after walking endlessly at JJ Market until our legs almost broke, we went off to MBK. Where we had ice cream AGAIN but this time at Swensen's. The Ice Milk Tea was so nice I jsut could not stop myself from drinking no matter how full I was. Haha! The ice creamw as also very nice... It has koko crunch at the bottom. Hehe. As for dinner, we ate at Yani Restaurant at level 5. It has since been renovated since the last time I visited BKK last year. It is much spacious now. The food is still yummy. We ate chicken green curry, rice, black peper stiry fry beef. It was sooo yummilicious! Hehehe! Everything also yummy eh?

As for the last day, nothing special, just ate Cold Stone at the airport. It was so cheap! Haha. I bought cake batter plus caramel cuppucino with resse chocolate. It was super yummy in the tummy! Hehehe! Wasted sia someone never buy or tasted mine. :P

Okay so that's all for my BKK trip! You guys should really visit BKK one day! And I am planning to visit this place once a year. Crazy right? I know. Haha! K bye.

#12 Chicken Thai Green Curry

As promised, here is the instant Thai Green Curry recipe. Reminder: green curry paste can only be found in Thailand and can be substituted with other brands that can be found in Singapore.

Ingredients:

1 onion (finely chopped or blended)
1 clove of garlic (chopped finely )
1 small box of coconut milk
1 packet of thai green curry
4 small eggplants
1/2 a chicken cut to desired sizes
3 tablespoon Tumeric powder
1 teaspoon salt
3 green chilli padi
4 potatoes (peeled and cut into quarters *optional ingredient*)
3 kaffir lime leaves
Water

Instructions:

Cover the chicken in tumeric powder and fry the chicken as usual in my other recipes as well. I added some salt; just a pinch. Then deep fry these chicken just until half cooked.

After that in another pot, sauté the onion and garlic. After it caramelise, you add in the green curry paste. Then you add in a cup of water and then the coconut milk. Put in your potatoes,  and let it boil. About 1 minute later, put in the chicken that has been pre-fried. After that put in your kaffir lime leaves (a must for thai dishes). Add in the salt as per mentioned. Not too much ya since your chicken also has salt and the paste might also have salt in it.. 

Let the chicken cook for about 10 minutes or so and then you add in the eggplant and the chilli. The egg plant has to be added in last as you don't want it to be soggy. Let it cook for about 5 minutes, and turn then heat off. You're done! Enjoy the meal with hot rice!

Idea and travel

I have already thougt of the next recipe I am going to cook, which is Thai Green Curry Chicken. Why all of a sudden I am cooking thai? Coz I am going to Bangkok on Saturday! No kidding, the food in Bangkok is to die for. Maybe coz I am an avid fan of thai food? So apart from recipes, I shall also post on food, delicious food I eat whilst travelling as we all know it is quite difficult to find Halal food in other region apart from Malaysia and Indonesia, I wanna make it easy for people to travel with a happy tummy as well. I have done my research but it was from various sources. Might as well put it up under one blog right as a summary?

I shall blog again tonight or tomorrow on my Thai Green Curry Chicken recipe. However, once again, it is an instant paste, and I bought the paste in Thailand last year. Haha! So in other words, you need to source for your own thai green curry paste in Singapore. There is la, brand name, Roi Thai, tried that one before and it was simply delicious, and all you needed to do was to put in whatever you want in your curry (chicken, veggies, beef? Anything!). The one I bought in thailand requires manual input of coconut milk etc. So let's try tonight! If it's nice, then I shall buy more in Bangkok! Muahaha! :)

#11 Black Pepper Stir Fry Beef

Halloooo~! Okay so I have been cooking quite a lot lately. This is a cheat recipe. Why cheat? Coz I used instant mixture. I bought instant Adabi Black Pepper Beef mixture. Just to try out the taste actually but I swear it was soooon delicious! And super simple to make! I also have a tip on how to make your meat tender! Let's go!

Ingredients

1 medium sized onions (half sliced thinly, half finely chopped)
2 cloves of garlic (finely chopped)
1 packet of Adabi Black Pepper mixture (About $1+ can find at NTUC)
400g of sliced beef
Corn flour
Corriander leaves
Oil
(So little ingredients but so delicious?!)

Instructions

Firstly, this is a very important tip. Wash your beef. Lather your sliced beef with corn flour. Afterwhich, heat up some oil, and deep fry your beef. Don't over fry it, as it would end up being hard. Why do this extra step? Coz this step will tenderize your beef. It will be easy for you to chew then. Once done, you set the beef aside.
Next, heat up another pan, with about 3 tablespoon of oil. Saute the finely chopped onions and garlic, until you you can see it caramelized, and then add in your beef. Stir fry the beef. Meanwhile, add some water to the black pepper mixture. It will look quite watery, but don't worry, that will dry up pretty quick in the pan. After that you add it in. Stir the beef, so that every beef is covered in this delicious sauce.

To make the dish more appealing, I put some corn flour like 1 tablespoon, mix with some water, to thicken the paste, and will make your beef glisten. Once you see the sauce has already thicken up, just snip the corriander leaves into small pieces using a pair of scissors, and then add in the sliced onions. Let is cook for about a minute, turn off the heat, so the corriander and onion would still be crunchy. I added in 1 chilli, cut thinly, as a decoration, to add colours to my dish. And there you go! Your Black Pepper Stir Fry Beef!

#10 Roti Kirai (or Roti Jala)

Hii! So I mentioned in the previous post that I would be posting on roti kirai in my next post, which is exactly what I am going to do now. You should definitely try as it is very easy and sooo delicious to eat with chicken curry!

Ingredients

1 packet of plain flour
1 egg
a pinch of salt to taste
water
1 tablespoon of tumeric

Instrcutions

Beat all these ingredients up. As for the water, put in slowly until you get a semi thick mixture, but not so thick. Liquid form but can be considered thick. Looks like a pancake batter.

It's recommended you buy this squeeze bottle, to easily make roti kirai coz if you use the old school method, it would be very messy. Heat up just a little bit of oil in the pan and do your magic with the bottle. Just "scribble" the pan with the mixture! Let the thing cook for about 30 minutes, dab some oil on it (for fragrance I suggest use a pandan leaf *tips from dad*) and then flip it over. Cook for another 30 seconds or so, and you are done! :)

#9 Chicken Curry

I made this Chicken Curry yesterday during my off day. I've promised my boyfriend's mum that I would take care of him while they're away in Perth, Australia, which is why I cooked this dish for him. I cooked a whole pot, which is good enough to last for 2 days. Anyway, here's the recipe!~

Ingredients

2 Onions
2 cloves of garlic
4 cm of ginger
half a packet of curry powder (in this case, I used chicken curry powder)
Water
salt
chicken stock
4 potatoes (Peeled and cut into 4 parts)
Chicken (cut into small pieces)
The 4 spices (1 cinnamon stick, 2 cardamom, 4 cloves and 2 star anise)
1 box of coconut milk
Tumeric powder

Instructions

After cutting your chicken to your desired size, you lather the chicken with tumeric powder, but not too much, just a thin layer. After that, fry the chicken until it is half cooked, so that the chicken will cook easily if you were to cook it later. Set aside to cool afterwards.

Upon peeling the onion, garlic and ginger, toss them in the blender. Put in water about half of these ingredients height in the blender. Blend until smooth. Once done, take the mixture out, and then stir in with the curry powder until you get a thick paste.

Next, heat up the pan with oil, and put in the 4 spices. Once you can smell the aromatic aroma from the spices, you put in your curry paste. If it seems too dry, add in more oil. Stir the mixture  and then let it cook under medium heat. Once you see the oil separating from the mixture, add in the coconut milk. Upon adding, fill the empty coconut milk box twice with water and add into the dish. Stir the mixture slowly until everything is uniform. Add salt taste. After that you add in your chicken and potato. I also added in 2 chilli, cut into halves, just to add colour to my dish.

Now all you have to do is put it on medium heat all the way and wait for your curry to cook. Yum2! Hehe! It's a surprisingly simple dish to make and you should really try it! You can buy instant prata to go along with that and also roti kirai (next recipe). Happy trying!
As indicated, the water level needs to be half of the height of the 3 ingredients in the blender.
Top left hand corner is the blended mixture together with the curry powder.
