#26 Ayam Masak Merah

So here's my 26th recipe, and also happens to be one of my favourite dishes to eat. I actually cooked this upon my boyfriend's request, yup, another book out session. It's quite easy actually. So here goes.

Ingredients

For the gravy

A handful of dried Chillies  (Boiled & Strained)
1 large onion, cut into quarter
3 cloves of garlic
About 4 cm of ginger, skin peeled off.

For the chicken

1 tablespoon of tumeric
1 teaspoon of salt
Cooking Oil
2 Chicken Drumsticks cut into half

Others

One small can of tomato puree (It's the 90 cents can)
2 pcs of star anise
1 stick of cinnamon
4 pcs of cloves
3 cardamom seeds
About 4 cm Galangal 
1 stalk of lemongrass 
2 tablespoon of sugar
Salt to taste
4 potatoes (peeled, cut into quarters & fried)

Instructions:

Blend the onion (peeled), garlic, chillies and ginger. Add some water until the water level is half of that the ingredients. Then blend until it becomes a paste that is not too watery neither is it too dry. 

Marinate the chicken with tumeric powder and a pinch of salt. This recipe is for small serving, you can add more chicken but the ingredients need to be more too. OKAY, so once that is done, fry your chicken. It doesn't have to be fully cooked. Half way cooked is okay, just need to stop the blood from flowing. Then put aside your chicken, fry your potatoes using the same oil. Make sure your fire is at medium to low while doing this so the inner part of your chicken will be cooked and you won't burn your potatoes. Fry the potatoes until golden brown. Set aside. 

Don't need to turn off the heat, add in your 4 spices, and then add in the blended ingredients. After which, add in the galangal and lemongrass that has been slightly smashed. Stir it up. Leave it to simmer, until you can see the oil separated from the ingredients. Add in your tomato puree, and then some water. As for the water, I prefer this dish to have more gravy, so I added more water. Those who doesn't like it that way, just add like half a cup of water. I added 1 cup of water. Stir it again, and then let it boil. Upon boiling, add in the chicken. Stir again and let the chicken meat absorb the gravy, this would vary between 8 to 12 minutes. Then, add in your potato and stir the dish again. Add in your salt and sugar, then stir. Let it boil once again, for about 6 to 7 minutes and turn off the heat.

Guess what? You're done. Garnishing using coriander leaves is optional. :)


#25 Sliced Baked Potatoes with Cheese

Hello! Okay so I know I have been posting this picture for quite some time already, but no recipes. It's because I was waiting to do call centre before I can blog. Haha. Anyway! I am 1/4 through to my goal of 100 recipes!! Wheee! Hahas... Amazeballz..!

So let's cut to the chase now and let me share you this DELICIOUS recipe! Seriously it is as easy as ABC. Now let's get to it!

Ingredients

Russet potatoes
Salt
Pepper
Mixed Herbs
A slice of cheddar cheese (per potato)
Butter
Garlic (thinly sliced)

Instructions

It's easy you know. Wash you potato thoroughly becuase you'll be eating with the skin yeah. Next, you cut the potatoes, but not all the way through. Like leave 1/7 of the potato uncut. Then in between the thin layers, you slot in some butter, and garlic. Then you sprinkle some salt, pepper and mixed herbs for seasoning. I put some chilli powder to make it spicy hehe. Then you wrap it in aluminium foil and bake it for 1 hour. After you are done, take it out, just open the top part of the foil. You tear the cheese apart, and slot it in between the potatoes and some you just place on top of the potato. Bake for about 5 minutes, just until the cheese melts. *ding*! And you're done to devour this tasty dish! :D

#24 Thai Lemon Prawns

So work was rather boring today.. So I decided to look up for simple recipes to cook that wouldn't cost me much. I chanted upon this recipe that simple caught my eye by one word. "thai". Hahas I have this mad love for thai food. Alright so here goes!

Ingredients

Prawns, deveined and deshelled
3 cloves of garlic finely chopped
3 chilli padi, finely chopped as well
1/4 cup(60 ml) of sweet chilli sauce
1 teaspoon of normal chilli sauce
1 tablespoon sugar
1 lemon, juiced
3 kaffir lime leaves, sliced
1 tablespoon fish sauce
1 teaspoon palm sugar
1/4 cup coconut milk
1/4 cup chinese parsley (chopped finely)

Instructions

Marinate the prawns in the chilli sauce, sweet chilli sauce, garlic, sugar, lemon, kaffir lime leaves, fish sauce and chilli padi for about 10 minutes or more.

Heat a pan with some oil, like a tablespoon, put all the marinated prawn together with the marinade in the pan, heat it up, and then add in your coconut milk. Stir the ingredients on medium heat all the way. Once it comes to a boil and has evenly mixed, off the heat and put in the parsley. 

Viola! You are done babeh! Yeah it's that simple. ;)

#23 Pan Fried Salmon with Garlic Cream Sauce

Hi readers! Today's dish would be something that is a little costly, but once in a while, it don't metter right?

Well, it's not something that I eat, but something that the man I love eats. It's salmon. I really don't like salmon to be honest. I only eat salmon in raw fresh state, as sashimi, that's all. Alright, let's cut to the chase now.

Ingredients:

Pan Fried Salmon

Salmon (up to your preference the size of it)
Half a lemon
Salt
Pepper
Egg White
Mixed Herbs
Olive oil

Garlic Cream Sauce

Cooking cream, one small box, like about 300 ml
4 Cloves of Garlic (chopped finely)
Mixed herbs
Corn flour
A pinch of salt
A pinch of pepper
Butter

Instructions:

Okay the recipe is a little vague as it really depends on the size of your salmon so if I were to say a tablespoon of salt, and you use a big slice of fish, then the thing would be tasteless right? Okay you get my point.

So anyway, firstly, wash your fish then drain the water off. And then wash it with lemon, so that it won't have a fishy taste/smell. After which i dipped in egg white, this is to make sure that the flesh remain intact when cooked. Then I seasoned with a pinch of salt, some pepper (if you want it to be more hot, put more pepper in then), and a teaspoon of mixed herbs. You can add more herbs if you want it to be more fragrant. I then poured some olive oil on it. Heat up a pan with a little olive oil, on low to medium heat, pan fry the salmon. Until you see the the bright orange flesh turning to peachy light orange. Don't overcook it though. So why it was sizzling on the pan, i put some more mixed herbs on both sides of the fish. It took me about 8 minutes or so to fully cook the fish.

Yeah it was that easy.

So next, the sauce. Take like a tablespoon of butter, heat in a small saucepan. Put in the garlic, and saute for a while, this is a very quick process because garlic gets burnt very quickly. Then you add in your cream. Best to use a whisk. Add in the corn flour a bit by bit to thicken the sauce. I added the same mixed herbs, a pinch of salt n pepper for taste and kept putting in the corn flour until it thickens. Keep whisking and make sure there are no clumps. And all these should be done as low heat. And viola! Once the sauce thickens, you are done.

Just pour it over the fish. That's all! Happy trying! :)

#22 No bake Oreo Cheesecake

Holla! Alright so tell me now, which one of my readers love cheesecakes? I'm sure everyone does! Especially if it is OREO CHEESECAKE! Well I was pretty much free at work, thus I had some free time to watch YouTube videos for recipe. As usual, I would pick the easiest one.

When i made the cake I didn't even use a measuring cup or what. I just used everything. So It's pretty easy when all you have to do is dump in all the ingredients. As for the oreo, I bought the one in a box where there are 9 packets of 3 oreos in them. Why am I baking all of a sudden? Well point one, my birthday is next Sunday. Next point is my bestfriend's brithday is next Monday. Then the next point is another bestfriend who lovessss oreo cheesecake birthday falls a day before mine. And lastly 13th of October we would be celebrating our biirthdays together and thus, the need for a cake. As we are all adults I don't see for fanciness in a cake to be a need. Haha as long as our tummies are happy. 

Ingredients:

9 packets of oreo (5 packet finely crushed & 4 packets crushed into chunks)
250g of whipping cream (I used Pauls, that's considered one box)
1 packet of SCS cream cheese
Half a tin of condensed milk/sweetened beverage creamer

Instructions:

Whip your cream until it has a soft peak. That means if you use the mixer, you will see that it has thicken but it's not dry and airy. We don't want that yeah. Beat on high speed yeah.

Then you take like half of the chunky oreo bits plus a tablespoon of the crushed oreos and also your creamer, mix with your cream cheese until you get a soft texture. I used a whisk for this. Then I added this mixture to my whipping cream. I mix it for a short while on medium speed just to incorporate the ingredients. Viola!

Now get your jar or for my case.. Tupperware. Wahahaha. Coz i couldn't find any Mason Jar anywhere. Pfft. Okay so use the finely crushed oreos as your base, put about half a centimetre. It's up to you how thick you want it to be. Then you put some of your cheesecake batter in. Not so much,  you sprinkle some of the bigger chunks oreo, and then cover that up with some more batter. Then you just tap the tupperware on your table top to get the air bubbles out. Then you put some of the chunky oreo on top, amd cover the top with a finely crushed oreos until all you see is BLACK. Hehe. As i am not a fan of black and white only, I also sprinkled some heart sprinkles to make it pretty. Then i just used some of the condensed milk to drizzle on top. That's all basically. Put in your freezer overnight. Frankly speaking, I can't wait to eat it!!!!!!! Okay happy trying! Budget was around $13, but for 3 big tupperwares (about 6 jars), it is definitely worth it. ;)

#21 Terriyaki Chicken Wings

Hey hey heyyyyy~! Okay so today I'm going to share with you a super duper extremely simple recipe. It's called Terriyaki Chicken Wings. Please make sure you ONLY  buy Woh Hup terriyaki chicken marinade. This is because other terriyaki chicken marinade contains wine and will make your dish haram to be consumed. You'll be surprised how yummy and simple this dish is.

Ingredients:

Woh Hup Terriyaki Chicken Marinade
Chicken wings
Mixed Herbs in a bottle (optional)
White pepper
Oil
1 garlic (chopped finely)

Instructions:

Yes, the ingredients are as little as that. Wash your chicken first okay! Then you put the chicken in a bowl , be generous with the terriyaki sauce, but not so much, as long as it covers the chicken and have enough to act as gravy for your dish. I used about half a bottle of the marinade. Lather your chicken in the marinade, and add in a little mixed herbs, but this is optional, but I'm telling you, you won't regret it as it gives an aroma to your dish that makes you drool. Oh yums. Just a dash of it will do, don't need so much, like about a teaspoon. I also added in a dash of white pepper for taste as well. But again, it's optional. I just like unique flavours in my cooking.

Leave the chicken marinade to set for at least 30 minutes. The longer the better, so that the taste would be stronger. Heat up your pan. Don't use so much oil, just about 1 tablespoon. Then you add in your garlic. After which, you just pour the whole marinated chicken in a pan. Slow cook the chicken on low heat. Occasionally turn flip the chicken, and then cover the pan with a lid. So that the chicken would be throughly cooked. Repeat this flipping process like twice for each side of the chicken. Afterwhich, your dish is ready to be served! So easy right? You're welcome. Haha.

#20 Kerepek Bayam

Hellllooo~! Okay this recipe was adapted from the cooking show "Dapur Bujang" by Chef Fendi. I just loveee that show! You guys should really watch it, which is readily available on YouTube by the way, as he teaches super simple recipes for learners. Amazingly, he commented on my picture yesterday on Instagram when I posted a picture of my groceries for this recipe. I was super happy as I always told my mum, I wouldn't mind marrying this guy coz he is hilarious and is a great cook. Fendi noticed me.... *dreaming* hahah alright let's start cooking!

I made some improvisation to the recipe as all he put in was salt and sugar, so I think there's a lack of flavour.

Ingredients:

Round Spinach (any amount you want)
Rice Flour
Water
Salt to taste
1 teaspoon Sugar
1 teaspoon Pepper
1 teaspoon Chicken Stock

Instructions:

Pluck the leaves of the spinach as we won't be using the stems. You can use that for other dish. Or just eat it like that like Popeye. No lah just kidding. Haha.

Then You add the flour in a mixing bowl (just use spoon will do), and add water bit by bit, until you get a thick watery mixture, some sort like a milkshake texture. Then you add in a pinch of salt, sugar, pepper and the chicken stock. Well this amount varies with the amount of flour you are using. I didn't make much thus I didn't need so much salt etc.

Then you heat up some oil in a flat frying pan (not a wok), dip your spinach leaves in the batter, and fry it in the hot oil until crispy. Yes! It's as simple as that! Repeat the step over and over again! All the best!
